Braised White Turnips
煨蘿蔔
Ingredients 材料:
White turnips, 1lb 白蘿蔔 1磅
Carrots, dried mushroom stems, shredded ginger root and minced Chinese celery, small amount 紅蘿蔔、冬菇蒂、薑絲 各少許, 中國芹菜(切末) 少許
Seasoning 調味料:
Bean paste, soya sauce, 1 tablespoon each 豆瓣醬、生抽 各1湯匙
Sugar, 1 teaspoon 糖 1茶匙
Water, ½ cup 水 ½杯
Cooking Method 做法:
- Cut peeled white turnips and carrots into diagonal pieces.
白、紅蘿蔔去皮,切滾刀塊。 - Soak dried mushroom stems in water until soft. Squeeze excess water and pound until tender, deep fry in medium hot cooking oil until golden brown and drain.
冬菇蒂用水泡軟,擠乾水份用刀拍鬆,放入中溫油鍋慢火中炸,呈金黃色起鍋。 - Add white turnips, carrots, dried mushroom stems and seasoning to a heated wok. Simmer until sauce is reduced to 1 tablespoon. Sprinkle with minced Chinese celery and serve.
鍋熱,加入蘿蔔塊、冬菇蒂及調味料以小火同煮,至湯汁略乾,盛起灑上芹菜末即可。
