Braised Eggplant

素燒茄子

Ingredients 材料:

Eggplant, 4 pieces 茄子 4 條
Dried minced plant based burger, 1 tablespoon 素碎末 1湯匙
Green peas, 1 tablespoon 青豆 1湯匙
Minced ginger, 1 teaspoon 薑末 1茶匙

Seasoning 調味料:

Soya sauce, barbecue (Sa Cha) sauce, 1 tablespoon each   生抽、沙茶醬 各1湯匙
Sugar, 1 teaspoon   糖 1茶匙
Water, ½ cup   水 ½杯

Cooking Method 做法:

  1. Slice the eggplants with skin. Deep fried in medium hot cooking oil until golden color and drain.
    茄子連皮切段,放進七成熱的油中炸至金黃色出香味撈出瀝油。
  2. Soak the plant based burger in cold water, wash and squeeze dry.
    素碎末泡水,洗淨,擠乾水份備用。
  3. Add 1 tablespoon cooking oil into wok, stir-fry the minced ginger and plant based burger, then add the seasoning and fry lightly. Pour in eggplants, green peas, braise for a few minutes on medium heat and serve.
    鍋中放少量油炒香薑末、素碎末,加入調味料略炒,放入茄子、青豆,中小火煨幾分鐘入味即成。
