Braised White Turnips

煨蘿蔔

Ingredients 材料:

White turnips, 1lb   白蘿蔔 1磅
Carrots, dried mushroom stems, shredded ginger root and minced Chinese celery, small amount   紅蘿蔔、冬菇蒂、薑絲 各少許, 中國芹菜(切末) 少許

Seasoning 調味料:

Bean paste, soya sauce, 1 tablespoon each   豆瓣醬、生抽 各1湯匙
Sugar, 1 teaspoon   糖 1茶匙
Water, ½ cup   水 ½杯

Cooking Method 做法:

  1. Cut peeled white turnips and carrots into diagonal pieces.
    白、紅蘿蔔去皮,切滾刀塊。
  2. Soak dried mushroom stems in water until soft. Squeeze excess water and pound until tender, deep fry in medium hot cooking oil until golden brown and drain.
    冬菇蒂用水泡軟,擠乾水份用刀拍鬆,放入中溫油鍋慢火中炸,呈金黃色起鍋。
  3. Add white turnips, carrots, dried mushroom stems and seasoning to a heated wok. Simmer until sauce is reduced to 1 tablespoon.  Sprinkle with minced Chinese celery and serve.
    鍋熱,加入蘿蔔塊、冬菇蒂及調味料以小火同煮,至湯汁略乾,盛起灑上芹菜末即可。
