Maitake Mushroom Stir-fry 

豉汁尖椒炒舞茸菇

Ingredients 材料 :

Maitake mushroom, 6 clumps  舞茸菇 6朵
Green pepper, 8 stalks  青尖椒 8條
Red pepper, 1 stalk  紅尖椒 1條

Seasoning 調味料 :

Fermented black beans, 2 teaspoons  豆豉 2茶匙
Vegetarian mushroom oyster sauce, 1 teaspoon  香菇素蠔油 1茶匙
Salt, mushroom powder, sugar, vegetable oil, vegetable soup, light soy sauce, dark soy sauce, water starch, each small amount  鹽丶香菇粉、糖、菜油、素湯、生抽、老抽、水澱粉 各適量

Cooking method 做法:

  1. Cut maitake mushrooms into pieces and wash, cut green and red peppers into big pieces, remove seeds, wash and drain.
    將舞茸菇切塊,略洗備用;青尖椒和紅尖椒切大塊,去籽,清洗晾乾備用。
  2. Fry maitake mushrooms, green and red peppers in medium high heated vegetable oil and drain.
    鍋內入適量的菜油,燒至七成熱,倒入舞茸菇和青、紅尖椒過油,撈起瀝油備用。
  3. Pour a bowl of vegetable soup into a pan, add right amount of salt and mushroom powder, put maitake mushrooms, green and red pepper into boiling soup to simmer, drain and set aside.
    鍋內放入一碗素湯,放適量的鹽丶香菇粉,滾開後倒入舞茸菇和青、紅尖椒,煨滾,撈起備用。
  4. Put small amount of vegetable oil in a pan, add fermented black beans, sauté till fragrant, then stir fry maitake mushrooms, green and red peppers, add small amount of salt, vegetable mushroom oyster sauce, mushroom powder, sugar, light soy sauce and dark soy sauce. Sauté till fragrant, then thicken with small amount of water starch and serve.
    鍋內下少許菜油,倒入2茶匙的豆豉,爆香後再放入舞茸菇和青、紅尖椒,翻炒,加入少量鹽,素蠔油,香菇粉,糖,生抽及老抽。爆炒出香味後勾少量的水澱粉即可。
