Steamed Seasonal Melons with Elm Tree Fungus and Black Bean Sauce

豉汁榆耳蒸時瓜

Ingredients 材料 :

Elm tree fungus 6 clumps 榆耳 6 朵
Bitter melon 1 whole, peeled and diced 涼瓜 1 條
Small pumpkin 1 whole 南瓜仔 1 個
Red bell pepper, diced Small amount 紅椒粒 少許
Fermented black beans Small amount 豆豉 少許

Seasoning 調味料 :

Vegetarian oyster sauce Small amount 素蠔油 少許
Light soy sauce Small amount 生抽 少許
Dark soy sauce Small amount 老抽 少許
Mushroom powder Small amount 素香菇粉 少許
Sugar Small amount 糖 少許

Cooking Method 做法 :

  1. Soak the elm tree fungus until fully expanded.
    先將榆耳泡發。
  2. Cut pumpkin and bitter melon into thick strips. Boil a pot of water, add two tablespoons of sugar, and place bitter melon in the pot until boiled. Remove the bitter melon from hot water and put it into cold water. Drain when cooled.
    將南瓜,涼瓜切成粗條形備用,待鍋內燒開水後,放入兩大匙糖,滾熱涼瓜後將其撈起放於涼水中,等完全冷卻後撈起瀝水。
  3. Put elm tree fungus, bitter melon and pumpkin in a bowl and mix them well with black beans, vegetarian oyster sauce, light soy sauce, dark soy sauce, mushroom powder and sugar. Place them on a plate and steam for 10 minutes. Top with diced red bell pepper and serve.
    將榆耳,涼瓜,南瓜放在盆中,下豆豉,素蠔油,生抽,老抽,香菇粉,糖攪拌均勻,裝在碟上,上鍋蒸十分鐘,出鍋後再撒上紅椒粒即可。
