Sweet and Sour King Oyster Mushrooms

甜酸皇子菇

Ingredients 材料 :

King oyster mushrooms, 3  皇子菇 3個
Honey peaches, 2  水蜜桃2個
Green pepper, ½  青椒 半個
Red pepper, ½  紅椒 半個
Vegetable oil, 200 ml  菜油 200 ml
Starch, small amount  生粉 少許
Water starch, 1 tablespoon  水澱粉 1湯匙
Vegetable soup, 1 bowl  素湯 1碗

Seasoning 調味料 :

Salt, mushroom powder, each small amount  鹽丶香菇粉 各少許
Sweet and sour sauce:  糖醋汁:
Ketchup, 3 tablespoons  番茄醬3湯匙
Vinegar, 2 tablespoons  白醋2湯匙
Sugar, 2 tablespoons  糖2湯匙
Salt, small amount  鹽 少許

Cooking method 做法:

  1. Slice king oyster mushrooms and honey peaches; dice green and red pepper.
    皇子菇丶水蜜桃切塊, 青紅椒各切丁塊備用。
  2. Quick fry king oyster mushrooms in medium heated vegetable oil and drain. Boil vegetable soup in a pan, add salt and mushroom powder, simmer king oyster mushrooms in the soup till flavorful, pour out and drain. Wrap king oyster mushrooms with starch and braise in medium high heated vegetable oil till golden brown and drain.
    鍋內燒六成熱油放入皇子菇過油瀝起。燒一碗素湯, 放入鹽、香菇粉, 把皇子菇煨入味撈起瀝水,上一層生粉,放入八成熱油鍋內燴至金黃色撈起。
  3. Stir fry green and red pepper and honey peaches in a pan with small amount of vegetable oil. Add sweet and sour sauce and water starch, then mix well the braised king oyster mushrooms with rest of the ingredients in the pan and serve.
    鍋內放少許油,把青紅椒丁和水蜜桃塊煸炒片刻,調入糖醋汁,勾少許水澱粉再放炸好的皇子菇塊,伴炒均勻即可。
