Fan Shaped Golden Vegetables


Ingredients 材料 :

Asparagus half 冬筍 半個
Carrot half 紅蘿蔔 半條
Young corn 11 pieces 小玉米 11個
Dried Chinese mushrooms 9 pieces 香菇 9朵
Broccoli half 西蘭花 半顆
Enoki mushrooms small bunch 金針菇 少許

Seasoning : 調味料 :

Vegetarian oyster sauce 2 tablespoons 素蠔油 2 湯匙
Salt 1 teaspoon 鹽 1 茶匙
Sugar 1 teaspoon 糖 1 茶匙
Cooking oil 1 tablespoon 油 1 湯匙
Sesame oil 1 teaspoon 麻油 1 茶匙

Cooking Method 做法 :

  1. Soak the dried mushrooms in water briefly, wash and squeeze dry.
  2. Slice the asparagus and carrots. Cut the broccoli into small pieces.
  3. Add the dried mushrooms and the seasoning to a small pot of boiling water, reduce heat and cook for about 30 minutes.
  4. Blanch the asparagus, sweet corn, and Enoki mushrooms in the boiling water.
  5. Heat the cooking oil in a wok, then stir-fry the broccoli briefly.
  6. Arrange the cooked vegetables in a fan shape on a platter and set aside.
  7. Make a sauce by mixing the salt, sugar, sesame oil, and corn starch with a little bit of water and bring it to boil. Remove when sauce thickens, and pour on top of the cooked vegetables. Serve immediately.
